    I chop up kale stalks and freeze them, then I can chuck them into a casserole or soup later. Also, if I get a fennel with masses of the fronds, I chop them up and freeze them in ice cube trays with aa little water, then save them for a myriad of uses later. (same with big bunches of herbs that I know I won't use straight away)
